  • Makes 9 Muffins. Keto & paleo blueberry muffin & bread mix. You Will Need: Recommended Preparation - 2 Eggs; 1/4 cup milk; 2 tbsp butter, melted. Paleo Preparation - 2 eggs; 1/4 cup nut-based milk or water; 2 tbsp ghee or oil. Instructions: Heat oven to 325 F. Grease or spray muffin tin with oil or butter. Whisk together eggs, milk/water, oil/butter/ghee, and mix in a large bowl until just combined, scraping sides of bowl as needed. Fill each muffin tin 1/2 full with batter. Bake for 17 to 23 minutes or until top springs back when touched.
