Keep Refrigerated.- Allow 1/3 lb uncooked per serving. Heat oven to 325 degrees F. Season roast. Place fat side up on a rack in a shallow pan. Roast uncovered in the center of the oven for 25-35 min/LB. Remove when a meat thermometer is inserted in the center & not touching bone reads 135-140 degrees for Medium-Rare. Let stand 15 minutes before carving.
