  • Elote Poblano Chowder

    Prep Time: 5 minutes
    Cooking Time: 25 minutes

    1 Elote Poblano Chowder soup kit
    1 Tbsp neutral cooking oil
    1 cup water
    4 cups milk

    Preheat a large soup pot over medium-high heat with 1 Tbsp neutral cooking oil. Prep the garnishes by cutting the lime into wedges and set aside along with the chopped cilantro, cotija cheese and a portion of the chile lime seasoning packet. Add onions, poblanos and red bell peppers to the pot and cook for about 2 – 3 minutes. Next, add in the chopped garlic and cook for 1 additional minute. Add 1 cup water, chowder seasoning packet and desired amount of chile lime seasoning (for your preferred spice level) to the pot and stir until seasoning is well combined with the liquid. Reduce heat to medium and add in all remaining vegetables and 4 cups of milk. Stir to combine. Bring soup to a gentle simmer (do not allow it to boil or the milk may curdle) and cook for about 15 – 20 minutes, or until the potatoes are cooked to your liking. Garnish each bowl of soup with the chopped cilantro, cotija cheese, a squeeze of lime and some of the reserved chile lime seasoning (if preferred). Serve and enjoy. Chef's Tip: Replace some of the milk with water for a lighter soup base.
