  • Chicken Tortilla Soup

    Prep Time: 5 minutes
    Cook Time: 25 minutes

    1 Chicken Tortilla Soup kit
    1-½ Tbsp neutral cooking oil
    4 cups water

    Preheat a large soup pot over medium heat with 1- ½ Tbsp neutral cooking oil. Prep ingredients by dicing the whole serrano into small pieces and cutting the lime in half. Add onions, peppers, corn, garlic and desired amount of chopped serrano peppers (for your preferred spice level) and cook for about 3 – 5 minutes. Once the onions are tender, add chicken and tomatoes to the pot and cook for an additional 5 minutes. Add 4 cups water and the seasoning packet to the pot and stir until seasoning is well combined with the liquid. Turn up the heat to high and bring the soup to a boil. Once boiling, reduce the heat to medium-low and let simmer for about 15 minutes. Squeeze the two lime halves into the soup pot and stir in about 1 Tbsp chopped cilantro. Garnish each bowl of soup with shredded Monterey Jack cheese, tortilla strips and reserved cilantro. Serve and enjoy. Chef's Tip: Remove the seeds and only use ¼ of the serrano pepper for a milder, less spicy flavor.
