  • Grill: Heat charcoal grill for 30 minutes or a gas grill for 10 minutes with lid closed. Clean and oil grate well. Brush fish meat and skin lightly with oil and season with mild herbs or spices. Grill 4" above medium heat (375°F surface temperature is ideal). Place fish on grill meat side down and cook 4 - 5 minutes. Flip fillet so the skin side is down and cook another 4 - 5 minutes until meat is opaque/white in the center or reaches 145°F.

    Other Options: Bake, baste and broil or pan sauté.
