How to Make Grilled Pizza

Chef Scott shows you how to prepare pizza dough for the grill and ways to get the whole family involved! He creates a delicious grilled ricotta and roasted tomato pizza and a dessert pizza with cookie butter, mascarpone, and crushed cookies. 
 
Prep Tip: Prepare dough the day before, wrap in plastic wrap and let rest in the refrigerator overnight. The next day, form the dough into smaller portions and place them on a sheet tray. Allow them to bloom (or rise) for about 10 to fifteen minutes before pressing or rolling out dough. 
 
Topping Ideas: Set up a topping station and allow everyone to make their own personal pizza. Once complete, place pizza back on the grill for 1-2 minutes or just until cheese is melted. 
  • Hawaiian Pineapple: Instead of tomato sauce, drizzle grilled crust with soy sauce and an apricot fruit spread. Top with mozzarella, grilled pineapple slices and red onions, and chopped Canadian bacon or ham. 
  • Margherita: Top with sliced fresh mozzarella, thinly sliced Roma tomatoes and fresh basil. Drizzle with olive or truffle oil. 
  • Pepperoni & Cheese: Pepperoni is everyone's favorite. Top with marinara, shredded mozzarella cheese and sliced pepperoni.
  • Dessert Pizza: Top with cookie butter, Nutella, marshmallow fluff, or honey. Sprinkle with crushed cookies, chocolate chips, diced fruit, berries, or crushed graham crackers for a little crunch.
