Grilled Pizza with Ricotta and Blistered Tomatoes

1 Pt fresh San Marzano or cherry tomatoes
1 cup(s) fresh basil leaves, thinly sliced
8 garlic
2 Tbsp Central Market Extra Virgin Olive Oil
1/8 Tsp salt
1/8 Tsp black pepper, freshly ground
1 frozen or homemade pizza dough
1/2 cup(s) whole milk ricotta cheese
1/2 cup(s) Parmesan, grated
1 Tbsp white truffle oil

Preheat oven to 400°F.

In an oven safe baking dish, add tomatoes, basil, garlic cloves, olive oil, and salt and pepper. Toss to coat. Roast uncovered for 25-35 minutes or until garlic cloves are slightly browned and tomatoes are blistered and soft. Remove from oven and allow to cool.

Preheat your grill to 350-400°F.

Divide and roll out prepared pizza dough into personal sized pizzas, about 10-12 inches in diameter.

Before grilling pizza dough spray the grill liberally with any non-stick cooking spray. Grill pizza dough for approximately 1 min per side, or just long enough for dough to puff up and pull away from grill grates.

Once both sides have nice grill marks, remove dough from grill. Spread ricotta cheese evenly over pizza and top with the blistered tomato mixture. (To make it easier to spread, lightly mash tomatoes with a fork or puree in blender for a smooth sauce). Top with Parmesan cheese and drizzle with truffle and olive oil.

Place pizzas back on grill and close the lid for 45-60 seconds just to melt cheese. Remove and serve immediately.
