Best Organic Pumpkin Pie
2 eggs ¾ cup coconut sugar 1/2 tsp salt 1 ½ tsp cinnamon 1 tsp ground ginger1/4 tsp ground nutmeg 1/4 tsp ground cloves 1/4 tsp ground cardamom 1/2 tsp lemon zest 1 can organic solid pack pumpkin 1 12 oz can evaporated milk 1 pie crust, pressed gently and firmly into a 9-inch pie pan
Preheat oven to 425°F. Beat eggs in a large bowl. Add sugar, salt, cinnamon, ginger, nutmeg, cloves, cardamom and lemon zest. Gradually stir in pumpkin puree and evaporated milk using an electric mixer. Mixture should be very smooth. Pour into prepared pie crust. Bake for 15 minutes and then turn oven down to 350°F and bake for an additional 45 minutes or until center is set. Remove from oven and let cool on a wire rack for at least 2 hours.
