Ingredients

Recipe makes 4 Servings

1 Lb spaghetti
1/2 cup(s) bacon, diced
15 Oz canned pumpkin
1 cup(s) heavy cream
2 eggs, yolks
1/4 Tsp pumpkin pie spice
1/4 cup(s) Parmesan cheese, grated
1 Tbsp garlic, minced
1 Tbsp shallot, minced
2 Tbsp sage, chopped

Instructions

Bring a large pot of salted water to a boil and cook spaghetti according to package directions. Drain.

Place a large sauté pan over medium-high heat and cook bacon, stirring occasionally, until golden brown and fat has been rendered, about 5 minutes.

While bacon is rendering, whisk together pumpkin, heavy cream, egg yolks, pumpkin pie spice and Parmesan cheese. Set aside.

Remove bacon from pan and drain on paper towels.

Place garlic and shallots in same pan and cook about 1 to 2 minutes.

Add cooked pasta and bacon back to pan and toss or stir well to mix thoroughly.

Stir in pumpkin mixture and mix well. Season with salt and pepper, heat through and garnish with sage.
