  • Grill: Heat charcoal for 30 minutes until ash-covered or gas grill for 10 minutes with the lid closed. Clean and oil grate well. Grill pork about 4 inches above medium heat (375°F is ideal) for 30 - 45 minutes or until an internal temperature of 160°F is reached. Flip pork halfway through cooking time. Slice meat thinly across the grain to serve.
