Keep refrigerated.- Grill: Heat charcoal for 30 minutes (until ash-covered) or gas grill for 10 minutes with lid closed. Set grill to medium heat (375°F is ideal). Season roast as desired and cook for 20 - 25 minutes per side. Remove at an internal temperature of 140°F for medium-rare or 150°F for medium. Let rest for 10 minutes before cutting/serving. Other Option: Smoke at 300°F for 45 - 60 minutes.
