Keep refrigerated. Contains bones.- Oven: Preheat oven to 325°F. Season pork as desired and place on a rack in a shallow pan. Cook for 22 - 26 minutes per pound. Remove at an internal temperature of 140°F for Medium-Rare or 150°F for Medium. Let rest for 10 minutes before cutting/serving. Other Option: Smoke at 300°F for 25 - 30 minutes per pound.
