Lamb.Allergens and safety warnings
Keep refrigerated.- Roast:
Preheat oven to 325°F. Place lamb, fat side up, on rack in a shallow roasting pan. Season lamb roast with herbs and seasonings, as desired. Do not add water. Do not cover. Place in oven and roast to desired doneness, checking internal temperature every 15 - 20 minutes. Remove from oven; tent with foil and let rest 10 minutes before carving.
Grill:
Prepare grill (charcoal or gas) according to manufacturer's directions for medium heat. Season or marinate lamb with herbs and spices as desired. Place on cooking surface and grill, turning once, until desired doneness is achieved. For best results, grill or broil lamb shoulder chops approximately 4 inches from the heat for about 10 - 15 minutes, turning over halfway through (1 inch thick).
• For medium-rare cook to 145°F.
• For medium cook to 160°F.
• For well-done cook to 170°F.
