  • 1. Heat 2-tbsp oil in stockpot over medium. Brown shanks 3 min/side. 2. Cover with cold water. Slowly bring to a simmer. Skim gray foam from the top until broth is clear. 3. Add seasonings. Simmer, covered, over low heat for 3 to 3-1/2 hours or until meat is tender. 4. Add chopped vegetables of choice, during the last hour of making soup. Option: braise.
