Conveniently already trimmed by our certified meat cutters, this beef brisket flat from H-E-B is also referred to as the “first cut.” Leaner than the point or second cut, the flat comes from the area of the cow that’s just above the front shanks and below the chuck. For melt-in-your-mouth beefy tenderness, cook the brisket in the oven or over indirect heat in a smoker — it’s best to go slow and low. After letting it rest, slice thinly across the grain.

Keep refrigerated or frozen. Thaw in refrigerator or microwave. Keep raw meat separate from other foods. Wash working surfaces (including cutting boards), utensils, and hands after touching raw meat. Cook thoroughly. Keep hot foods hot. Refrigerate leftovers immediately or discard.- Smoker: Preheat smoker or pellet grill to 225°F. Season brisket as desired and place on smoker for 8 – 12 Hours. Note: It's important to maintain a consistent temperature in the smoker throughout the cooking process. Remove brisket when desired tenderness is reached. Let rest for 10 minutes before slicing thinly across the grain.
Other Option: Sear brisket and braise at 350°F for 2-½ – 3-½ hours.
