The Finca La Joya Estate in Marcala, Honduras is nestled along a mountain ridge where trade winds from the Pacific and Atlantic oceans merge and create an arid microclimate. Run by the Amaya family, the estate is home to Bourbon and Catuai coffee. Grown at 5,315 – 5,577 feet, the coffee cherries are honey-processed, which means they’re picked at their ripest, fermented for 48 hours and dried on African drying beds without being washed.
