Contains: WHEAT- Cilantro Stuffed Mushrooms Prep Time: 15 minutes Cook Time: 25 minutes 8 large BUTTON MUSHROOMS (or 4 PORTABELLA MUSHROOMS) 3 Tablespoons EXTRA VIRGIN OLIVE OIL 1/4 cup HILL COUNTRY FARE(R) WHOLE WHEAT BREAD CRUMBS 1/2 cup TOMATO AND BASIL FETA CHEESE, crumbled 1/4 cup diced RED BELL PEPPER 1/4 teaspoon CRUSHED RED PEPPER FLAKES 1/4 cup chopped CILANTRO 1. Heat oven to 425°F. Line a sheet pan with foil, spray with non-stick cooking spray and set aside. 2. Rinse mushrooms and remove stems, place the mushroom caps aside and chop the stems. Heat 2 Tablespoons extra virgin olive oil in skillet over medium heat for 1 minute (350°F). Add the chopped mushroom stems and stir-fry for 2 minutes, remove from skillet, and place in a mixing bowl. 3. Brush mushrooms caps on all sides with remaining extra virgin olive oil and bake on the prepared baking sheet (stem side up) for 15 minutes. Reserve liquid that collects inside mushrooms. 4. Combine the stir-fried chopped mushrooms with the Hill Country Fare(R) Whole Wheat Bread Crumbs, tomato and basil feta cheese, red bell pepper, red pepper flakes, cilantro, reserved mushroom liquid and mix well. Stuff each mushroom with mixture, place on same sheet pan, and bake for 10 minutes. Serve stuffed mushrooms warm. Makes: 8 servings Meal Tip: You can also stuff tomato halves, or lengthwise sliced & scooped out zucchini with the cilantro stuffing.
