  • Ready to Cook. Heat charcoal for 40 minutes or gas grill for 10 minutes with lid closed. Grill 4" above Medium-Low heat (325 degrees F surface temp is ideal). Cook in a closed grill for 60-75 minutes. Turn after 20 minutes or turn as needed to avoid flare-ups. Remove when 165-170 degree F internal temp in the thickest part.
