  • Heat charcoal for 40 minutes or gas grill for 10 mins with lid closed. Grill 4" above medium-low heat (325 degrees F surface temp is ideal). Cook in closed grill 60-75 minutes. Turn after 20 minutes or turn as needed to avoid flare-ups. Remove when 165-170 degrees internal temp in the thickest part. OPTION: Bake in a 375 degree oven for 50-60 minutes.
