Keep refrigerated.- Stovetop:
Coat roast with seasoned flour. Heat 2 Tbsp of oil in a large pot over medium heat. Brown roast on all sides. Wipe or drain oil from the pot. Add 1/2 cup beef broth or 1 can of diced tomatoes. Season and cover with lid. Simmer over low heat for 2 - 3 hours until tender. Do not boil or meat will toughen. Add vegetables during the last hour.
