  • Arrange the charcoal in half of the grill. Heat 30 minutes or heat one side of the gas grill for 10 minutes with the lid closed. Sear meat directly over the heat for 3 min/side, then move to cool side and cook for 15-20 min in a closed grill. If 2" cook 25-35 minutes. Keep air temperature in chamber 350-400 degrees F. Remove when 135 degrees F internal temperature for Medium-Rare. Let stand 5 minutes.
