  • Heat charcoal for 30 minutes until ash covered or gas grill for 10 minutes with lid closed. Set grill to medium heat (375°F is ideal). Season meat as desired and grill at 375°F for 4 - 8 minutes per side. Remove at internal temperature of 140°F for medium-rate doneness or 150°F for medium doneness. Let meat rest 10 minutes before cutting and serving.
