  • Heat charcoal 30 minutes until ash covered, or gas grill 10 minutes with lid closed. Set grill to medium heat, hold palm just above grate. Heat is ideal at 375°F (if it causes you to pull your hand away in 4 seconds). Season meat as desired then grill 4 - 8 minutes per side, removing when meat reaches internal temperature 140°F for medium-rare doneness or 150°F for medium doneness. Let meat rest 10 minutes before cutting/serving.
