Ingredients

Keep in a cool, dry place.- Masa Ingredients:
4 cups Mi Tienda Tamale Corn Masa Flour Mix
3 cups warm water
1 cup lard or shortening
1 ½ tsp salt
1 tsp baking powder
Tip: You can substitute the lard or shortening with corn oil and the water with chicken broth.
1. In a deep bowl or in a mixer bowl, place Mi Tienda Tamale Corn Masa Flour Mix and warm water, knead for 1 to 2 minutes or mix at low speed if using a mixer. Set aside.
2. Pour the lard in a skillet and heat until melted, add salt and baking powder, mixing with a whisk or a spoon, set aside, and keep warm.
3. Add warm lard little by little to the bowl with the masa, kneading constantly; if using a mixer, use medium speed until all the lard is added.
4. Continue mixing until the dough is completely integrated, if using a mixer, increase speed and mix for 4 to 5 minutes.
5. Masa is ready to use in your favorite Tamales recipe.
Quick Chipotle Pork Tamales
Prep Time: 90 minutes / Steam Time: 1-1/2 hours
1/2 bag corn husks (1 lb)
2 ham flavored packet concentrate
1 container (16 oz) H-E-B Fully Cooked Pork Carnitas, trim off fat & shred
3-1/2 cups Mi Tienda Tamale Corn Masa Flour Mix
1/2 cup canola oil
1 teaspoon baking powder
1 jar (16 oz) chipotle salsa
1. Soak corn husks in hot water until soft (about 30 minutes to 1 hour). Combine the ham seasoning packets with 1 quart boiling water; set mixture aside.
2. Using electric mixer combine the Mi Tienda Tamale Corn Masa Flour Mix, oil, baking powder, ham broth and 1/3 cup salsa for 3 minutes; set aside.
3. Add the remaining chipotle salsa to shredded pork and toss to coat.
4. Tamal Assembly: Place 3 Tbsp. masa on the bottom of cornhusk and spread to a 4x4-inch square. Place 2 Tbsp of shredded pork on center of masa square. Roll the tamale, fold the tamale tail end under and set on sheet pan. When all tamales are made, you can either place them into gallon zipper freezer bags to freeze or you can steam them.
5. Steaming Tamales:
Use a vegetable steamer pot. Fill steamer pot with water amount recommended by manufacturer. Place tamales, open end up, in steamer basket and arrange so that the steamer basket is full (don't crowd as tamales will expand). Cover tamales with leftover shucks to retain steam. Bring water in steamer or pot to a boil, cover tightly and reduce heat to medium low. Cook tamales tor 1-1/2 hours or until masa pulls away.
Makes: 3-1/2 dozen Tamales
