  • To Make Tortillas:

    2 lbs corn masa flour
    1.2 qt water

    In a deep bowl, combine corn masa flour and water. Knead with your hands to form a soft, smooth dough. Divide dough into 70 equal portions and make dough balls. Place one at a time on a tortilla press that's lined on the top and bottom with plastic wrap. Press firmly to make a thin tortilla. Place the tortilla in a skillet or griddle on medium-high heat and cook for 30 seconds on each side, turning the tortilla 3 times. Serve tortillas with salsa, salt, butter or fresh cheese. You can also let tortillas cool down, cut into triangles and fry for tortilla chips.
