  • Oven: Preheat oven to 325°F. Season the surface of the roast. Place fatty side up on a rack in a shallow pan. Roast, uncovered in the center of the oven 30 - 37 minutes per pound of meat. Remove when a meat thermometer inserted in the center & not touching any fat reads 160°F. Let stand 15 minutes before carving.
