Keep refrigerated.- Oven:
Preheat oven to 325°F. Press seasoning onto surface of roast. Place roast on a rack in a roasting pan. Do not add water. Cook uncovered in the center of oven for 35 minutes per lb until a meat thermometer inserted in the center reads 135°F. Let stand for 15 minutes before carving. Slice thinly across the grain.
