  • Heat oven to 325 degrees F. Press seasonings onto the surface of the roast. Place on a rack in a roasting pan. Do not add water, roast uncovered in the center of the oven for 30-35 min/lb until a meat thermometer in the center reads 140 degrees F internal temperature. Let stand for 15 minutes before carving. Slice thinly across the grain.
