How to Choose the Right Size Roast
Consider the number of people you're serving and choose a roast that's big enough to allow for 1/2 lb uncooked roast per person.
Slow-Roasting Instructions:
Preheat oven to 300°F. Season roast and place fat-side up in shallow roasting pan. Bake uncovered in center of the oven for 14 – 17 minutes per pound. Remove from oven when meat thermometer in center of roast reaches 135°F. For a juicier roast, let rest for 20 minutes before carving.
