Description
Slightly sweet and mild with a firm, moist texture, these Great Catch frozen snapper fillets are wild caught using a hook and line. Offering an excellent source of protein, they're easy to thaw and cook in a skillet or in the oven. Tuck a bag in your freezer for an easy main course option — they’re individually vacuum-sealed for freshness.

Blackened Snapper
2 Great Catch snapper fillets, thawed
2 Tbsp unsalted butter, melted
1/4 cup H-E-B Texas Originals Blackened Seasoning Spice Blend
Cut thawed fillets into 4 portions. Heat a large heavy skillet over medium-high heat for 5 minutes, or until skillet is very hot but not smoking. Meanwhile, brush the top sides of fillets with melted butter. Sprinkle evenly with the blackened seasoning blend. Brush skillet with remaining butter. Sear fish 5 minutes per side, or until center turns from clear to opaque (white) and fish just begins to flake with a fork. Serve immediately.

Remove all packaging and place fillets in a covered dish. Thaw in refrigerator overnight. For a quick thawing method, remove all packaging and place fillets in a resealable bag. Immerse the sealed bag in a bowl of water or in the sink under a thin trickle of cold running water for about 15 – 20 minutes.
Stovetop: Heat a large heavy nonstick skillet over medium-high heat for 3 – 5 minutes. Add 2 tablespoons of oil to skillet. Pat thawed fillets dry with a paper towel and season as desired. Place in a single layer in skillet. Cook 5 minutes per side depending on thickness or until fish flakes easily with a fork and internal temperature reaches 145°F.
Oven: Preheat oven to 375°F. Spray a rimmed baking pan with nonstick cooking spray. Place thawed fillets in a single layer in pan. Bake uncovered for 16 - 20 minutes depending on thickness or until fish flakes easily with a fork and internal temperature reaches 145°F.
