Homemade Bourbon Bacon Jam

Recipe makes 10 Servings

1 Lb thick cut bacon, finely chopped
2 cup(s) red onion, finely diced
1 1/2 cup(s) red bell pepper, finely diced
1/4 cup(s) brown sugar
2 Tsp fresh garlic, finely minced
2 Tsp balsamic vinegar
1/3 cup(s) good quality bourbon
2 small sprigs fresh rosemary

Place a large skillet over medium-high heat. Add bacon and cook thoroughly until desired crispness.

Remove bacon from pan with a slotted spoon and reserve. Leave about 2 tablespoons of bacon fat in pan.

Add onions and bell peppers to pan. Reduce heat to medium and sauté until onions are very soft, or about 30 minutes. Add water, a few teaspoons at a time if needed throughout cooking to keep onions from getting dry or burning.

Once onions are very soft, add brown sugar, remaining water, garlic, vinegar, bourbon and rosemary to pan. Simmer on low for 10 to 15 minutes, or until sauce thickens and reduces to a syrupy texture.

Add pepper and salt, just to taste.

Serving suggestion: Serve on toasted baguette slices with goat cheese. Also makes a great pizza topping or finishing sauce for grilled meat and vegetables.
