Cooking: 1. Heat charcoal 40 minutes or gas grill 10 minutes with lid closed. 2. Grill 4 inches above medium-low heat. Hold palm just above grate. If heat causes you to pull away in 5 seconds, heat is ideal (325 degrees F). 3. Cook 40 minutes with lid closed. Turn and baste after 20 and 30 minutes. Cook to 165 degrees F internal temperature.
