REFRIGERATE UNUSED PORTION IN A PLASTIC OR GLASS CONTAINER. LOT NUMBER AND BEST BY: ON PACKAGE- Fajita Enchiladas Prep Time: 15 min. Cook Time: 15 min. 2 cups chopped cooked BEEF or CHICKEN FAJITAS 3/4 to 1 cup chopped ONION (about 1 medium) 2 cups shredded MEXICAN BLEND CHEESE 1 large TOMATO, chopped 1 can (15 OZ) HILL COUNTRY FARE® MILD ENCHILADA SAUCE 12 CORN TORTILLAS 1. Heat oven to 425° F. Spray a 9x13-inch baking pan with non-stick cooking spray; set aside. 2. Combine cooked chopped fajitas, onion, shredded cheese, and chopped tomato in a large bowl. Stir in half of Hill Country Fare® Mild Enchilada Sauce, reserving the remaining sauce for later use. Set mixture aside. 3. Heat tortillas until soft, * then spread 1/4 cup enchilada mixture down the center of each tortilla and roll tightly, one at a time. Place in a prepared baking dish in a single layer, seam side down. Spray enchiladas with non-stick cooking spray to keep moist during baking; set aside. 4. Stir in the other half of the enchilada sauce to the remaining enchilada mixture and pour over the center of the enchiladas. 5. Bake uncovered for 15 minutes or until cheese is bubbly on the edges and tortillas are golden. Serve immediately.
