  • Queso Fresco Spicy Hot Enchiladas Prep Time: 15 minutes Cook Time: 15 minutes 1 can (14.5 OZ) HILL COUNTRY FARE® HOT ENCHILADA SAUCE 1/4 cup CANOLA OIL 1 package (12 count) CORN TORTILLAS 1 cup chopped WHITE ONION 1 package (12 OZ) QUESO FRESCO, crumbled 2 cups HASH BROWN POTATOES 1. Heat oven to 350° F. Spray a 9 X 13-inch baking dish with non-stick cooking spray and set aside. Place 1/2 of the Hill Country Fare® Hot Enchilada Sauce in a pie pan and set aside. 2. Heat a medium skillet over Medium heat for 2 minutes. Add the oil and allow to heat 1 minute. Fry each tortilla, one at a time, for 5 seconds on each side and then dip into the enchilada sauce. Place fried and dipped tortillas in a separate dish. 3. Spread 1/3 cup crumbled queso fresco and 1 tablespoon chopped onion down the center of each tortilla and roll tightly, one at a time. Place in prepared baking dish in a single layer, seam-side down. Top enchiladas with remaining cheese, onions and enchilada sauce. Bake enchiladas in oven for 15 minutes. 4. Meanwhile, heat previously used skillet to Medium high heat for 2 minutes. Add hash brown potatoes and stir-fry for 5 minutes until crisp and golden. Season to taste with salt and pepper. 5. Serve enchiladas with fried diced potatoes on the side. Makes: 6 servings
