  • Speedy Enchilada Bake Prep Time: 10 minutes Cook Time: 15 minutes 12 CORN TORTILLAS, cut into strips 1 can (14.5 OZ) HILL COUNTRY FARE® MEDIUM ENCHILADA SAUCE 1 package (8 OZ) MEXICAN BLEND SHREDDED CHEESE 1 cup chopped ONION 2 medium TOMATOES, chopped 1/4 cup chopped CILANTRO 1. Heat oven to 450° F. Spray a 2-quart microwave-safe baking dish with non-stick cooking spray; set aside. 2. Combine tortilla strips, enchilada sauce, cheese, onion, tomato and cilantro; toss to coat ingredients. Pour enchilada mixture in prepared baking dish. Cover dish loosely with plastic wrap and heat in microwave oven for 5 minutes on High. 3. Remove plastic wrap and bake on the center oven rack for 10 minutes until cheese is bubbly. Makes: 6 servings
