Oven: Preheat oven to 350°F. Rub surface of roast with oil. Season all sides, then place fat side up on a rack in a shallow roasting pan. Roast, uncovered in the center of the oven for 40 - 45 minutes per lb until a meat thermometer in the center reads 155°F for Medium doneness. Let stand 10 minutes before carving.
