Keep Refrigerated.- Arrange charcoal in half of the grill. Heat 30 minutes. Heat one side of the gas grill for 10 minutes with the lid closed. Sear meat directly over the heat 1 min/side, then move to cool side. Cook 50-60 min in closed grill skin side up. Keep air temperature in chamber 350-400 degrees F. Remove when 170 degrees F internal temperature is reached. Let stand 10 minutes. OPTION: Bake.
