  • Chocolate Chip Muffins: 2 cups flour 3/4 cup packed brown sugar 3 1/2 tsp. baking powder 1/2 tsp. salt 1/2 tsp. ground cinnamon 1 cup whole milk 2 large eggs 2 Tbsp. vanilla extract 1 cup unsalted butter (melted) ¾ cup H-E-B Organics® Bitter-Sweet Mini Chocolate Chips (70% cacao) 1/4 cup packed brown sugar Heat oven to 400°F. In one bowl combine flour, 3/4 cup brown sugar, baking powder, salt and cinnamon. In a separate bowl, whisk together milk, eggs, vanilla and melted butter. Add flour blend to liquid mixture and mix together until a lumpy batter is formed. Fold in chocolate chips and mix thoroughly. Spray a 12 cup muffin pan with cooking spray or line with baking cups. Fill cups 2/3 full with batter and sprinkle remaining 1/4 cup brown sugar on top. Bake for 18 - 20 minutes, or until a toothpick inserted into the center comes out clean. Cool for 2 minute before removing from muffin tin. Makes 12 muffins
