Chilled Chicken & Rice Salad
1 cup uncooked brown & wild rice blend
1 – 2 chicken breasts, chopped
1 bag (5 oz or 6 oz) fresh baby spinach leaves
1/2 cup honey lime vinaigrette dressing
1 small can mandarin oranges, drained
1 cup red or green seedless grapes, halved
1/2 cup coarsely chopped walnuts
Cook rice according to package directions. Cook chicken breasts according to package directions. Chop spinach coarsely and toss with hot rice. Set aside to cool slightly or chill until ready to serve. Stir in dressing. Toss rice mixture with chopped chicken, mandarin oranges, grapes and walnuts. Serve at room temperature or chilled.

Ingredients

Keep frozen.- Oven: Preheat oven to 425°F with the rack in the center of oven. Spray a foil-lined baking sheet with nonstick cooking spray. Place chicken breasts on baking sheet, about 1" apart in a single layer. Bake for 20 – 22 minutes (depending on thickness) or until heated thoroughly. Let stand 1 minute before serving.
Microwave: To Make 1 Serving: Place 1 frozen chicken breast on a microwave-safe plate. Cover with a paper towel. Heat on 50% power for 5 – 7 minutes (depending on thickness) or until heated thoroughly. Let stand for 1 minute before serving.
Do not overheat; chicken breasts are already cooked. Due to variations in equipment, cooking time and/or temperature may require adjustment.
