  • Arrange charcoal in half of grill and heat 30 minutes or heat one side of gas grill 10 minutes with lid closed. Sear pork directly over the heat for 2 minutes per side then move to cool side Cook 40 - 45 minutes in a closed grill. Keep air temperature in the chamber at 350 - 400°F. Remove pork once it reaches internal temperature of 155°F. Let stand 10 minutes.

    Option: Sear & roast 400°F in the oven.
