Cook thoroughly. Keep hot foods hot. Refrigerate leftovers immediately or discard.- Oven: Preheat oven to 325°F. Season pork loin roast as desired and place on a rack in a shallow pan. Cook for 22 – 26 minutes per pound. Remove at internal temperature of 140°F for medium-rare or 150°F for medium doneness. Let roast rest for 10 minutes before cutting/serving. Other Option: Smoke pork loin roast at 300°F for 25 – 30 minutes per pound.
