Keep Refrigerated.- Arrange charcoal in half of the grill heat 30 minutes or heat one side of gas grill 10 minutes with lid closed. Season or marinate as desired. Cook 40-50 minutes on the cool side of the grill. Keep air temp in chamber 300-350 degrees F. Baste after 25 and 35 minutes. OPTIONS: Braise, Slow Roast, or Stew.
