  • Heat oven to 325 degrees F. Rub roast with oil and season as desired. Place on a rack in a shallow roasting pan. Roast, uncovered in the center of the oven for 30-35 min/lb until a meat thermometer in the center reads 150 degrees F for medium doneness. Let stand for 15 minutes before carving.
