Keep refrigerated or frozen. Thaw in refrigerator or microwave. Keep raw meat separate from other foods. Wash working surfaces (including cutting boards), utensils, and hands after touching raw meat. Cook thoroughly. Keep hot foods hot. Refrigerate leftovers immediately or discard.- Smoker: Preheat smoker or pellet grill to 225°F. Season brisket as desired and place on smoker for 8 – 12 hours. Note: It's important to maintain a consistent temperature in smoker throughout the cooking process. Remove brisket when desired tenderness is reached. Let brisket rest for 10 minutes before thinly slicing across the grain.
Other Option: Sear brisket and braise at 350°F for 2-½ – 3-½ hours.
