Description
In the same family as taro and eddo, malanga blanca is a root vegetable that's only edible when peeled and cooked. The possibilities are endless with this unique potato substitute, from boiling and mashing to slicing into chips and frying. After cooking malanga blanca, its starchy white flesh becomes soft and creamy and has a nutty, earthy taste. Recognizable by its elongated shape and rough brown skin, it's native to South America and is used in Cuban and Puerto Rican dishes such as sancocho, mondongo, pasteles and alcapurrias.
