  • Heat charcoal for 40 minutes or one side of the gas grill for 10 minutes with the lid closed. Bank coals in one half of grill or reduce gas heat toward Low. Place meat on the cool side. Close lid & cook for 75 minutes. Turn after 45 minutes. Add coals to keep chamber air temp @ 300 degrees F. Baste with sauce in last 20 minutes. OPTIONS: Dice and Stew.
