  • Optional: Roast bones in a 425 degree oven for 20 minutes per side. Add bones and flavorful bits from the roasting pan to a stock pot. Cover with cold water. Slowly bring to a simmer Skim gray foam from the top until broth is clear. Season broth. Cover. Simmer over low heat for 4 hours to make stock for soup. Add chopped vegetables in during the last hour.
