Keep Refrigerated.- Arrange charcoal in half of the grill. Heat 30 minutes or heat one side of the gas grill for 10 minutes with the lid closed. Sear meat directly over the heat for 2 min/side, then move to cool side. Cook 40-45 minutes in a closed grill. Keep air temperature in chamber 350-400 degrees F. Let stand 10 minutes.
