Stovetop: Heat a large skillet for 2 minutes over medium heat. Remove chorizo from casing. Add 12 oz crumbled chorizo to a hot skillet. Stir fry for 7 - 8 minutes. Add 6 beaten eggs to cooked chorizo. Cook for 1 minute or until internal temperature reaches 160°F. Serve in tortillas.
