1 non-stick cooking spray
1/3 cup(s) 100% pure olive oil
5 Oz chopped sweet onion
3 cup(s) self-rising flour
2 eggs, large
12 Oz Fat Tire Beer
1 cup(s) zucchini, shredded
1 cup(s) cheddar cheese, shredded

Instructions

Heat oven to 400°F.

Spray a 13 x 9-inch baking dish with non-stick cooking spray and set aside.

Heat the olive oil in a large skillet over medium-high heat for 1 minute, then add onion and stir-fry for 2 minutes until golden crisp. Set aside and cool.

In a large bowl, combine flour, eggs, beer, zucchini and cheese.

Spread batter into prepared baking pan and bake for 25 minutes.
